Waffles with Yeast without Baking Powder
Ingredients:
2 cups whole or 2% milk
1 tbsp active dry yeast
½ cup warm water
½ cup melted butter
3 cups all-purpose flour
½ tsp baking soda
2 eggs
1 tsp salt
2 tbsp sugar (this is optional according to your preferences)
Instructions:
First, use a mixing bowl and mix the yeast with water. Stir well until the yeast goes into a liquid solution.
Second, use another mixing bowl to add the butter, milk, and salt. If you are going to have the waffles for a dessert or combine them with sweet toppings add 2 tablespoons of sugar. Whisk all the ingredients until they become an evenly mixed solution.
The next thing you need to do is to mix together the solutions from both bowls. Make sure that the components from the second bowl are cooled down to room temperature. Then add the mixture from the second bowl into the first bowl. Blend in order to get a nice, evenly mixed combination.
Afterward, add the flour into the mixture. Mix until the flour completely dissolves and form a dough.
Put a plastic wrap over the bowl and let it sit overnight. The dough will rise double or triple of his size during the night.
Once the dough has risen, beat two eggs. Add them to the batter together with the baking soda. Whisk these components in the dough until they mix evenly.
After you are done with the preparation of the batter it is time to cook the waffles. Grease the waffle plates with some butter or oil to prevent from sticking. Preheat your waffle iron according to the instructions given in the product manual. Divide the dough into 8 even parts and place each part separately on the waffle iron to cook. Ingredients:
3 cups water
4 cups whole and untoasted buckwheat groats
¼ cup apple cider vinegar
¼ cup liquid coconut oil
¼ cup tapioca starch
6 drops liquid stevia

1 ½ tsp cinnamon
Instructions:
Put the buckwheat in a mixing bowl. Put water on heat and wait until it reaches around 80 degrees Fahrenheit. Make sure you have enough water to cover the buckwheat and 3-4 inches above. Then pour the water into the bowl with buckwheat. Add apple cider vinegar and leave the buckwheat to soften for 8 to 24 hours.
After this certain amount of time, the buckwheat will be soaked. Strain the buckwheat to separate it from the water and apple cider vinegar. Discard the apple cider vinegar and water mix. Afterward, rinse the buckwheat and leave it to drain. Once the buckwheat is drained place it in a blender.
Finally add the water, coconut oil, tapioca starch, liquid stevia, salt, and cinnamon in the blender and blend on high speed. Blend until you get an even smooth combination.
Prepare your waffle maker for cooking. Coat a small amount of butter or oil on the cooking surface to ensure easy waffle release. Turn on and preheat the waffle iron according to the user’s manual. Pour one cup of the batter onto the waffle plates. Always follow the instructions given by the manufacturer when using the waffle maker.
This recipe is good for 4 waffles. After you are done cooking the waffles serve them straight away. They taste better when they are served warm.
Homemade Baking Powder Substitute
Ingredients:
2 parts cream of tartar
1 part baking soda
1 part cornstarch
Instructions:
You can substitute the baking powder in every recipe with cream of tartar and baking soda. For every teaspoon of baking powder needed in the recipe, use ½ teaspoon of cream of tartar. Also, add a ¼ teaspoon of baking soda. Stir until you get an evenly mixed combination.If want, you can add ¼ teaspoon of cornstarch. This component is optional.
Place the mixture in a container and seal it well. You can pre-make this mixture and use it whenever you need it. Just make sure that the container is tightly sealed and kept in a refrigerator. Additionally, you need to keep this mixture away from moisture.
If you have any doubts after keeping this mixture for a while in the refrigerator, test it before use. You need this mixture to rise your waffles and you wouldn’t want to use it if the ingredients aren’t active anymore.
Put some water on a heat and wait until it starts to steam. Put a little amount of the baking powder substitute in the water and wait for the reaction. If the water starts to bubble, the mixture is good for use. If not discard it.
